Pork Blood Stew

Ingredients:
I/2 k. of pork belly, cut into small cubes
150 g. of pork liver
2 c. of pig’s blood
1 garlic, crushed and minced
1 bay leaf
2 chili peppers 1 ginger, minced
1 onion slice thinly
1 tbsp. of cooking oil
sinigang mix
salt
pepper

Procedure:
1. Prepare and heat the casserole
2. Pour the cooking oil then add the garlic and ginger.
3. Cook the pork until brown.
4. Add the onions, chili peppers, bay leaf and sinigang mix and continue cooking
5. Season with salt and pepper
6. Add water if needed, boil and simmer for 30-45 minutes until the pork is tender.
7. Season with a little salt.
8. Pour the mashed blood and the liquid into the casserole and boil for 5 minutes
9. Add the minced liver and cook for two minutes.
10. Taste it and Serve

Ingredients:

bread crumbs
sliced ham
chicken breast
cheese
toothpicks
egg

Procedure:

1. Prepare chicken breasts by cutting lengthwise

2. Place one slice of ham down on the chicken breast.

3. On top of the ham place a slice of cheese

4. Roll up chicken breast and secure with toothpicks.

5. Place chicken in egg mixture and roll around until it is covered in egg.

6. After that roll around with bread crumbs.

7. Place the chicken in a pan of oil on top of stove to brown the outsides.

8. Place in the bake pan and bake in oven for 30 minutes at 350 degrees until cook.

9. Remove from oven and remove the toothpicks from the chicken.

10. Serve

Here’s the ingredients and procedure:

1 can evaporated milk
1 can condensed milk
8 egg yolks
1 tsp vanilla
3/4 cup white sugar(for the caramel)

1. First caramelize the sugar.

2. Blend the egg yolk, add the evaporated milk, condensed milk, vanilla and beat lightly.

3. Pour caramelized sugar into mold spread evenly and gently pour the mixture on top of the caramel.

4. Place the filled mold into larger pan filled an inch of water and bake at 350 degrees 1 to 1/2 hour.

5. Ready when inserted knife comes out clean.

6. Let it cool completely and transfer to a plate upside down.

7. Serve

Here’s the ingredients and procedure:

2 firm mangoes
1 sweet red pepper
1/4 cup  thinly sliced green onions
2 tbsp lime juice
1 tsp minced hot pepper
1/4 tsp salt

1. Peel and thinly slice mangoes lengthwise.
2. Then thinly slice the red pepper too.
3. In large bowl, mix lime rind and juice, hot pepper and salt.
4. Add mangoes, red pepper, green onions and mix well.
5. Serve

Ingredients:

1/2 kilo pork belly, cut in cubes
2 cloves garlic, crushed
1 small onion; chopped
1/3 cup vinegar
1/4 cup soy sauce
2 tablespoons salted black beans
1/4 cup brown sugar
3 bay leaves
1 cup rice water
1/4 tablespoon ground black pepper
Cooking oil

Procedure:

1. First marinate the pork with a soy sauce, black beans and pepper for at least 1 hour.
2. In a big sauce pan or wok, heat the cooking oil then saute the minced garlic and onions.
3. Add the pork from the marinade and bay leaves.
4. Stir fry for few minutes until pork starts to render its oily fat.
5. Add water and then bring to a boil until most of the liquid has evaporated.
6. Add vinegar but do not stir in order not to over sour the flavour and parboil for few minutes.
7. Add the brown sugar stirring once in a while.
8. Simmer until a saucy consistency is achieved.
9. Adjust seasoning with soy sauce according to taste.
10. Serve

Pancit Bihon

Here’s the ingredients:

1 pack bihon noodles
1/4 kl pancit
2 boneless skinless chicken breast, cut into thin strips
1/2 lb. cooked shrimp
2 cups of chicken broth
4 garlic cloves, minced
1 onion, thinly slice
cabbage, sliced fine
carrots cut diagonally
green beans, cut diagonally
1/4 c. vegetable oil
4 tbsp. soy sauce
salt
pepper

Procedure:

1. First you have to soak the rice stick noodles in warm water for 10 minutes
2. Heat oil in a large skillet.
3. Saute garlic and onion
4. Add the chicken breast, salt, pepper and soy sauce.
5. Saute for a few minutes to lightly brown chicken.
6. Add carrots, green beans and shrimp.
7. Cover and cook for a few minutes.
8. Add cabbage and chicken broth until it comes to a boil.
9. Add the bihon and pancit noodles.
10. Cook for about 5 more minutes or until the noodles are cook.
11. Put lemon and serve.

Meat Balls

It was yesterday when my friend Lilia invited me for dinner. She prepared Filipino foods such as eggplant omelet, shrimp sinigang, fried chicken and meatballs. What I love most is the meatballs or we called bola bola in our dialect. Meatballs are one of Lilia’s favorite foods. Usually this recipe is prepared during fiesta, gatherings, birthday, Christmas celebration, New Year, wedding, if you have special visitor and for any special occasions. It’s easy to prepare and very delicious.

The ingredients are the following:

* 500 grams minced beef

* 1 red pepper

* 3 eggs

* 2 tablespoons spring onion

* 2 tablespoons soy sauce

* 1/3 cup plain flour

* ground black pepper and salt to taste

* tomato ketchup

Here’s the procedure:

1. Mix all the ingredients except for the flour into a large bowl.

2. Take some of the mixed ingredients and roll it with flour and form balls.

3. Heat some oil in a frying pan.

4. Fry until they becomes golden brown.

5. Serve

Chicken Broccoli Divan With Fusilli

Ingredients:

3 cups hot cooked broccoli florets
2 cups cubed cooked skinless chicken breast
1 can condensed low fat cream of broccoli soup
1 1/2 milk
1 1/2 shredded light cheddar cheese
2 tbsp dry bread crumbs
1 tsp margarine or butter, melted
3 cups uncooked tri-coloured fusilli

Procedure:

1. Arrange broccoli and chicken in baking dish. Pour in mixture of soup and milk. Sprinkle with cheese. Top with mixture of bread
crumbs and margarine.
2. Bake at 425F until heated through for about 25 minutes
3. Cook fusilli according to package directions, omitting the salt
4. Serve
